Abstract

L'invention porte sur un procédé de production de boissons alcooliques par fermentation selon lequel on ajoute une source d'azote assimilable à la liqueur (12) en cours de fermentation pour compléter sa teneur en azote assimilable tandis qu'on observe le gaz dégagé par la liqueur en cours de fermentation pour y déceler la présence de H2S à l'aide de bandelettes indicatrices (18) réagissant sélectivement à la présence de H2S. La source d'azote assimilable est ajoutée à la liqueur en fonction du niveau de H2S détecté dans le gaz. Cela s'effectue en continu sur une base périodique pendant tout le processus de fermentation. L'invention porte également sur une trousse d'essai utilisable avec le procédé.
A method of making an alcoholic beverage by fermentation, in which a source of assimilable nitrogen is added to the fermenting liquor (12) to supplement the assimilable nitrogen content of the liquor, comprises monitoring the gas evolving from the fermenting liquor for the presence of H2S by making use of indicator strips (18) which are selectively responsive to the presence of H2S. A source of assimilable nitrogen is added to the liquor in response to the detection of H2S in the gas. This is done on a periodic basis throughout the fermentation process. A fermentation test kit for use in the method is also disclosed.
